Spice rubbed pork tenderloin

This is a quick, easy and healthy weeknight dinner, I have had a bit of a gippy stomach since Egypt, so I wanted something that was not too rich or heavy for dinner and I picked up a pork tenderloin this weekend. (You could also use chicken breasts if you had those instead Leah)


Preheat the oven to 350 then mix together the spice rub.




  • 1 tablespoon of coriander
  • 1 tablespoon of Hungarian paprika
  • 1 teaspoon of chili powder
  • 1 teaspoon of dried ginger 
  • 1 teaspoon of salt
Mix all the spices together in a small bowl.

Rub the spice mixture all over the meat.

Heat a tablespoon of Olive oil up in an oven proof frying pan and brown the meat on all sides.

Ready for the oven
Then put into the oven for approximately 20 minutes until the pork is just cooked through but still moist.

Take out of the oven and rest for 5 minutes before cutting.

Then slice into large chunks and serve.  This one tenderloin fed 3 of us adequately and I served a baked potato and broccoli a good light meal ready in less than 1/2 an hour.
