Italian sausage week night pasta

This is probably my most common standby when I am having trouble with what to cook for dinner and I do not have a lot of time.  I always have pasta in the house and I nearly always have some italian sausage in the freezer.


4 Italian sausages sliced
1 onion chopped
1 clove of garlic thinly sliced
3 large tomatoes (last of the season sadly) or equivalent canned
Handful of chopped fresh basil and parsley.
1 tablespoon of olive oil
Pasta cook what ever amount you cook for your family we pasta shells tonight, but any pasta will do.



While your pasta is cooking add the onion and olive oil to a high sided frying pan or shallow saucepan.  Just as the onion is softening add the cut up sausage.


Stir it around until the sausage is browned and mostly cooked through.


Now add the chopped up tomatoes and herbs. you could use dried, substitute 1 teaspoon of dried basil. (but really the fresh are better) If you had some open red wine you could add 1/4 cup now. I did not and it is not worth opening a bottle for.


Cook the sauce down so that the tomatoes are are fallen apart and taste for seasoning.

When the pasta is cooked drain and toss with the sausage and tomatoes and top with shredded parmasan.
