Everyone likes cheesy potatoes

That is what I was told this evening as I produced cheesy potatoes to two sons who apparently were not that hungry, then decided they had to eat any way.

Hard to really call this a recipe but here goes.

2 large potatoes sliced 1/4"(the thinner you cut them the quicker they cook)
2 cups of grated cheddar (or any other cheese you happen to have in the fridge)

Preheat the oven to 400
line a cookie sheet with parchment paper, this is not essential but sure makes clean up easier, and I am all about making clean up easier. Put the sliced potatoes on the parchment paper and top each slice with grated cheese, using up about 1/2 of the cheese

Bake for 10 minutes, turn the potato slices over and top with the remaining cheese and put back in the oven for 10 minutes. And viola beautiful cheesy potatoes.  These go well with grilled meats, tonight we had them with roasted chicken thighs and peas.

Done!  About 5 minutes work and 17 minutes in the oven got to love it.
