Lemon Canada Cup cakes

When Nancy and I went go buy cup cake papers to use for the graduation cup cakes I spied Canada Day Cup Cake papers which came with little Canada flags.  Having made Jubilee Cup cakes in England, I thought it only fair that I should make Canada Cup Cakes for Canada's Birthday.


I like lemon cupcakes as the lemon flavour helps to counter the sweetness of cup cakes, and I really do not have a sweet tooth.  I made these to share with my department at work and so I made 18 exactly the right amount to give one to everybody and exactly what this recipe made.


1/2 cup butter, room temperature
2/3 cup granulated white sugar
3 large eggs
1 teaspoon pure vanilla extract
Zest of 1 large lemon (outer yellow skin)
1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1/4 cup milk




In the bowl of an electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl as needed. Beat in the vanilla extract and lemon zest.

In a separate bowl whisk together the flour, baking powder, and salt.

With the mixer on low speed, alternately add the flour mixture and milk, in three additions, beginning and ending with the flour. Scrape down the sides of the bowl as needed. Half fill the muffin cups with batter.


Bake for about 15minutes or until a toothpick inserted into a cupcake comes out clean. Remove from oven and place on a wire rack to cool.


I take my cup cakes out as soon as they are cooked before they go brown so that they do not dry out.

Once the cupcakes have cooled ice with a lemon icing.

3/4 cup of butter at room temperature
Juice of 1 lemon
2 cups of icing sugar
Cream to thin out (a few tablespoons)

Mix all the ingredients together, adding enough cream to get the correct consistancey then spread or pipe on top of the cup cakes.


I kept these in the muffin tins for easy transportation, then sprinkled on a few red mini m & m's and stuck in the flags.


Easy but quite effective I thought.  Any way there was a cup cake for everyone sitting on their desk in the morning, a couple of days early but any way Happy Canada Day.
