Roast Parmesan zucchini (courgette)

I really like zucchini especially roasted this way, they are tasty easy and have more flavour than other cooking methods.

To feed 4

  • 4 zucchini sliced in half lengthwise 
  • 4 tablespoons of Parmesan finely grated 
  • 2 tablespoons of olive oil.
Place the zucchini cut side up in a shallow oven proof dish top with the parmesan cheese then drizzle with olive oil.

Ready for the oven
Place in a 350 oven for about 20 minutes (a little longer if they are larger) until the cheese is golden and the zucchini is cooked.

My kind of recipe easy quick enough for a week night dinner, few ingredients and delicious.
